Green Bean Mashed Potatoes

Sometimes it’s hard to get veggies in your kids diet, so I’ve been testing out different ways to add them in. I have to give credit to my husband because this was his idea and it tasted great!

What you will need:

  • Green Beans (I froze a bunch from my garden)
  • Potatoes (Cubed)
  • 1-2 tbs Sour Cream
  • 1/4 Cup Milk
  • 2 tsp Butter

Step 1

Since my green beans were frozen I boiled some water and then added in the green beans. I let them cook for about 10 minutes before I added in the cubed potatoes. Then I let the potatoes and green beans boil for about 15-20 minutes. I’m not sure if you can over boil them, so I normal use this time to start on preparing other food. Drain the water once the potatoes are done/soft.

Step 2

Once everything is drained I put it back in the pot and add in the butter, sour cream, and milk. Depending how chunky you want your potatoes you can either just mix with a spoon or use a potato smasher.

Step 3

You can add other spices if you’d like. Sometimes I add garlic or onions. Then put it on your child’s plate and hope they eat without noticing they are also eating green beans. 🙂
